Grill leeks to add a delicious smoky flavour to their natural sweetness!

This BBQ leek recipe is a simple way to make the most of seasonal produce, whether you’re cooking outdoors or using a grill pan. It’s a great addition to any shared meal and a creative way to use surplus vegetables. 

Serves

4-6

Ingredients

  • 4 leeks, trimmed, peeled and cut in half lenthways. Make sure you wash between the layers and pat dry!
  • 3 cloves of garlic, peeled and minced
  • 1 tablespoon mixed herbs
  • 100g butter
  • salt & pepper

Method

  1. In a sacepan, melt down the butter. Reduce to a low heat and add the garlic and mixed herbs, allowing the butter to infuse. 
  2. Brush the leeks with the garlic butter and then place cut side down onto the grill. Sprinkle with salt and pepper and brush with more garlic butter. 
  3. After 4-5 minutes, turn the leeks over. You’re looking for a good char. 
  4. Brush again with garlic butter and add a sprinkling of salt and pepper. 
  5. Cook for a further 4-5 minutes. 
  6. Remove from the grill and serve alongside the rest of your barbecue! 
  7. Instead of using butter, this also works using chicken, beef, pork or lamb fat.
