Celeriac is a brilliant root vegetable that’s often overlooked, but it makes a fantastic crunchy slaw!
Its mild, nutty flavour works beautifully when shredded and combined with a fresh dressing. This simple recipe is a great way to use up surplus celeriac and create a crisp, refreshing side that pairs well with sandwiches, baked potatoes or salads.

Ingredients
½ a celeriac
1 carrots
1 apple
1 red onion
5 tablespoons mayonnaise
1 tablespoon Dijon mustard
Juice of ½ a lemon
1 teaspoon dried herbs
Method
Peel and both the carrots and celeriac and add into a bowl. Toss through a couple of drops of lemon juice to stop the celeriac from going brown.
Slice the apple and red onion into this strips. Remember to throw away the core of the apple. Toss this through the carrot and celeriac.
Combine the mayonnaise, mustard, lemon juice and dried herbs. add this to the slaw and mix through thoroughly. Add any salt and pepper to taste.
