Bring a pan of water to the boil and generously salt. Cook your pasta according to the instructions. Reserve about a mug full of pasta water, but drain the rest.
Whilst your pasta is cooking, in a frying pan, heat some oil to a medium- high heat. Fry off your courgette slices off in batches, removing them when golden and allowing to drain on some kitchen towel. Sprinkle them with a little bit of salt and black pepper.
In the same pan, reduce the temperature to a medium heat. Add a little more oil if needed and fry off the minced garlic. Return the courgette to the pan and pour in the pasta.
Add in the the mug of pasta water and stir constantly whilst keeping on a medium heat, allowing the sauce to cook down and coat the pasta. Add in the parmesan and continue to toss through as the cheese melts.
Finish off with more black pepper and parmesan to taste.
