The perfect recipe for turning surplus leeks into an impressive side dish with just a few ingredients.
Fondant leeks are a simple yet flavourful way to showcase this versatile vegetable. Slowly cooked until tender, they develop a rich, slightly sweet taste and a soft, melt-in-the-mouth texture.

Ingredients
6 leeks, trimmed and sliced into 1 inch discs. Wash them and pat them dry!
4 tablespoons of butter
3 peeled cloves of garlic
Fresh herbs such as rosemary or thyme
salt & pepper
Method
In a frying pan, melt the butter on a medium heat. As the butter is melting, add in the garlic cloves and sprigs of fresh herbs.
Once the butter is melted, place the leeks round side down into the the pan. Sprinkle the top with salt and pepper.
After 4-5 minutes, turn the leeks over onto their other round side. They should have a nice sear or caramelisation. Sprinkle with more salt and pepper.
Check that the sear is even on both sides, and then remove from the pan.
Serve straight away or allow to cool and serve in a salad.
