Soft, comforting and wonderfully versatile, gnocchi is the perfect dish for turning surplus ingredients into something special.

Whether you’re using up leftover potatoes, or just want a chance to get hands-on in the kitchen, this is the perfect recipe to transform everyday ingredients into a delicious, satisfying meal!

Serves

4-6 

Ingredients

  • 1kg potatoes
  • 250g plain flour

Method

  1. Preheat your oven to 180 degrees Celsius. Place your potatoes onto a baking tray and bake for 1 hour to 1 hour 30 minutes, depending on size. 
  2. Remove from the oven and allow to cool enough for you to handle. Halve the baked potatoes and scoop out the insides into a mixing bowl. 
  3. Using a potato masher, mash until smooth and then add the flour, and knead into a smooth dough. Add a pinch of salt if you wish.
  4.  Dust your work surface with flour, and split the dough into 8 equal parts. Roll each part into a rope shape. Using a knife, cut the rope of dough into inch long pieces. 
  5. Bring a pan of salted water to the boil, and gently place the gnocchi into the water. Cook for about 3 minutes, or until the gnocchi floats to the top. 
  6. Serve with pesto or your favourite pasta sauce and enjoy!
