Surplus leeks and mushrooms are the perfect pairing in this savoury and satisfying dish.
This toasted sandwich is a great way to turn surplus vegetables into something warm and comforting with minimal ingredients. Ideal for a quick lunch or light dinner, it shows how seasonal produce can be transformed into a delicious, low-cost dish.

Ingredients
2 slices of bread
Butter to spread
2 chesnut mushrooms, sliced
¼ leek, peeled, washed and sliced
grated cheese
1 teaspoon of mustard
Salt & pepper to taste
Method
In a frying pan, heat up a teaspoon of oil to a medium heat. Add in the leeks and mushrooms and cook down until soft.
Season with a pinch of salt and pepper.
Butter both sides of the slices of bread.
Spread mustard on to one side, and sprinkle half of the cheese over the top.
Layer on your fried leeks and mushrooms and sprinkle over the rest of the cheese.
Place your 2nd slice of bread over the top.
Place the toastie in a dry frying pan and heat to a medium heat. Cook on one side for 2-3 minutes, or until golden brown.
Flip over and do the same on the other side.
Remove the toastie from the pan and slice in half. Enjoy!
