Two easy iced teas built from a handful of store-cupboard staples and a splash of creativity, these are a brilliant way to stretch surplus tins and jars into something refreshing for a crowd.
Peach Iced Tea
Ingredients
2l water
6 Earl Grey tea bags
1 x 400g tin of peaches
Zest of 1 lemon
Method
Bring the water to a boil on the hob. Add the tea bags and lemon zest, stir, then turn off the heat. Allow to stew for a few minutes.
Blend the whole tin of peaches, including the sugar syrup, into a puree.
Remove the tea bags from the water, then add the peach puree. Stir through and add extra sugar if wanted.
Allow to cool overnight, then serve with ice and a lemon slice.
Cranberry Iced Tea
Ingredients
2l water
6 Earl Grey tea bags
1 cinnamon stick
Zest of 1 orange
200g cranberry sauce
1 tablespoon honey
Method
Bring the water to a boil on the hob. Add the tea bags, orange zest and cinnamon stick, stir, then turn off the heat. Allow to stew for a few minutes.
Remove the tea bags from the water, then add the cranberry sauce and honey. Stir through and add extra honey if wanted.
Allow to cool overnight, then serve with ice and an orange slice.
